Chicken Fricassee Recipe
This is a seriously simple and easy to make Chicken Fricassee recipe. One of our team stumbled across this beauty on a recent holiday to the Jamaican town of Port Antonio. He bought it home and his kids went quite crazy! We hope you do to! - Preparation time: 15 minutes

Ingredients
- 4 Chicken breasts, skinned and boned
- 3 celery stalks
- Tspn Worcestershire sauce
- Squirt lemon juice
- 1 onion, diced
- 4 tbsp flour
- 2 carrots
- Sprig of Fresh Parsly
- 4 tbsp butter
- salt and pepper
Method
Slice the onion finely and mix together with 1 inch pieces of celery. Bring about 2.5 litres of water to the boil in a pan and add the chicken a nd vegetables. Add some salt and pepper and cook for about 1 hour or untill the chicken is cooked. Take out the chicken and let it cool. Then strain the liquid and dispose of the vegetables. Cut the chicken breasts in half. Melt some butter in a large pot and throw in the flour, keep mixing for a few minutes and then slowly add about half of the the liquid you strained earlier. Bring to the boil. It should have formed a fairly smooth mixture by now so add the lemon juice and worchestershire sauce and then season with some salt and pepper. If it is too thick add some more liquid and if it is too thin add a sprinking of thickening agent. Add the chicken, cook some rice, serve and enjoy you Chicken Fricassee!
