Simple Chicken Tikka Masala Recipe
This is a fantasticly simple Chicken Tikka masala Recipe and I hope you enjoy it. It's been slowly evolving on the Indian sub continant for hundreds of years and there are a million different versions of it. Here is the classic and of couorse the simplest. - Preparation time: 20 minutes
- Marinating time: Over night
- Cooking time:25 Minutes
- Serves 4
Ingredients
- 8 Pieces of bonless chicken
- Juice of one lemon
- 1/2 tsp red Chilli powder
For the marinade - 4 Garlic cloves, Chopped finely
- 1 inch of fresh Ginger
- 1 tsp Cumin seeds
- Fresh coriander
- 150ml Yogurt
- 1 red Onion, sliced thinly
- Salt and pepper
For the Sauce - 2 tsp of lemon juice
- 2 tsp tomato purée
- Butter
- 120ml Greek yogurt
- 1/2 tsp Brown Sugar
Method
For the marinade
Pu the chicken into a large dish. Mix the chilli powder and lemon juice together ande rub over the chicken. Finely Chop the garlic cloves, ginger and onion and mix together. Mix this with 2 tspn cumin, yoghurt, garam masala, corinader, salt and pepper. Pour this mixture over the chicken and cover it with cling film. It's best to marinade it for as long a possible but anything over 3 hours is fine. Later on... remove the chicken from its marinade and arrange the pieces into a suitable pan for grilling. Grill the chicken for 4 minutes on each side.
For the Sauce
Mix the tomato puree with some 200ml of warm water. Mix together with what remains of the marinade and all of the other ingredients. In a large pan, melt some buttter and pour in this mixture. On a low heat bring to a simmer, keep stirring for 5 minutes. Add the chicken pieces and cook gently untill the chicken is cooked all the way through. Garnish with Coriander and serve hot with Indian bread or fresh rice.
